A couple additions to our fruit salad turned it into a delicious summer supper. I added sliced almonds, quinoa and lime juice to mango, watermelon and cantelope for a fruity meal that satisfied all our appetites. It's a meal we could (and will) eat any time of day.
We're trying to incorporate quinoa as a regular part of our diets. Initial attempts didn't go over so well. Having it with the fruit definatly won us over. I found the recipe at two peas and their pod but had to make modifications. Honey and my blood sugar do not get along so I left that out. I really wanted to try quinoa with fruit so I just used what fruit I had on hand. We liked it, that's what matters.
There was another recipe on the site I'm looking forward to trying as well, Black Quinoa Salad with mango, avacado and tomatos. We're out of quinoa so as soon as I pick some up we'll be making it.
